Eating Well's Buffalo Chicken Hot dish

Number of Servings: 6

Ingredients

    6 oz whole wheat elbows
    1T Canola
    1 1/2 Carrots, sliced
    1/2 lg Onion, diced
    1 1/2 Celery Stalks, sliced
    1 1/2 t minced garlic
    1 Lb Chicken
    1/2 C cornstarch, cubed
    2 C skim milk
    1/8 t Salt
    2.5 T hot sauce
    3/4 C blue cheese

Directions

(preheat oven to 400F)
1. Cook pasta al dente, set aside drain & rinse
2. Cook celery, onions, garlic & carrots in canola until almost tender
3. Add chicken and cook until no longer pink (5-7 mins)
4. In bowl mix cornstarch & milk whisk.
5. Add mixture into saucepan w/ salt and cook until thick (4 mins)
6. Remove from heat & add hot sauce.
7. Put pasta in 3qt caserole, pour chicken mixture on top and add blue cheese sprinkled on top.
8. Cook for 30 minutes @ 400 F
