3lbs Chicken Thighs 2 Tbs. Curry Powder 1 Medium Potato Chopped 1 Garlic Clove Chopped 1 Small Onion Chopped 1 Red Ripe Tomato Chopped 1 Cup White Rice 1Tsp. Salt 2Tsp. Pepper
First, Lay chicken in a deep dish or bowl with a lid with a little bit of the natural liquid. Coat with Curry. Add Potato, Garlic, Onion, Tomato, Salt & Pepper. Make sure everything is well coated. Cover and place in the fridge for a few hours to marinate. Heat 1Tbs. Canola oil over medium heat in a NON teflon pan. (Chicken will cook better in a non nonstick pan) Toss in all ingredients. Stir often to insure it doesn't burn. It will let off a little bt of liquid. Let that evaporate. When Liquid evaporates pour in enough water to cover chicken fully. Bring to a boil, then cover, turn heat to low and simmer for 30 minutes stiring occasionally.
