Freezer Corn

Introduction

This was a recipe my grandma used to make. Can you believe I had to get it from an old neighbor! This was a recipe my grandma used to make. Can you believe I had to get it from an old neighbor!
Number of Servings: 16

Ingredients

    8 cups fresh sweet corn cut off the cob (I use an angle food cake pan and an electric knife)
    1 cup water
    2 TBS butter
    1 TBS sugar
    pinch of salt if you want it

Directions

Once you have 8 cups of corn you have two options cook in the oven or cook in the microwave. I chose to try one in each and didn't notice a difference either way.

In the Oven: add everything in a oven safe pane stir put in preheated 400F oven for about 20 minutes, until corn starts to "turn" I think that means partially cooked.

In the microwave - put everything in a microwave safe bowl stir can cook about 10 minutes. I stopped it after 5 for a good stir and to scrape down the sides.

When finished cooking let it cool down either place in containers or freezer bags. If you go the freezer bag route I recommend laying them out on a cookie sheet in the freezer over night to make storing for the winter easier.

makes about 16 1/2 cup servings
