Creamy Egg salad (with vinegar)

Introduction

I've ALWAYS added a little vinegar to my egg salad and deviled eggs. You can add more or less depending on taste but I think this makes any egg salad the best. Number of Servings: 4

Ingredients

    6 hard boiled eggs
    3 Tbsp Kraft Olive oil Mayo
    2 tsp French's Honey Dijon mustard
    1 tsp apple cider vinegar
    1/2 tsp Paprika ground
    1 tsp white pepper (or black if you prefer it. White pepper gives it a lighter taste)
    1 tsp Morton's salt substitute (this adds flavor AND give you a good dose of potassium which most of us need)
    1/4 tsp Kosher salt
    Garlic Powder to taste

Directions

I usually use a potato masher to mash the egg whites and yellows together then add all other ingredients. You can serve immediately or let sit overnight to meld flavors.

  • This was super easy and super yummy! I didn't have (surprisingly) a lot of the ingredients so I substituted the cider vinegar for pomegranate and reg. mustard in place of the Dijon. Thanks for posting I was looking for a low cal quick dinner and this worked perfectly! Will make again! - 9/25/10
