IntroductionChanged up the recipe on the back of the arborio rice package. I have used organic Lemonade mixed with water in place of chicken broth. Changed up the recipe on the back of the arborio rice package. I have used organic Lemonade mixed with water in place of chicken broth.
2 Tbsp Butter, unsalted
1 Garlic Clove
1 Cup Arborio Rice, uncooked
1/3 Cup White Wine
1 Cup Prawns, medium, rinsed
5 Spears Asparagus
1 Cup Water
1 Cup Organic Lemonade
Reduce heat to medium-low and add 1/2 cup of broth (water and lemonade mix) and stir constantly until broth has evaporated. While this round of stirring, add the asparagus and prawns.
Continue adding 1/2 cups of broths and stir until broth has absorbed until adding the next 1/2 cup.
Rice should be tender at this point. Gradually add the parmesan and stir until cheese has melted.
Remove from heat and serve. Add a sprinkle of parmesan on each dish as garnish (optional).
