Salmon with Creamy Caper Sauce

Introduction

Number of Servings: 3

Ingredients

    3/4 pound wild Alaskan salmon fillet
    2 tablespoons Best Foods Olive Oil Mayonnaise
    1 tablespoon grated Parmesan cheese
    1 tablespoon drained capers
    Freshly ground black pepper

Directions

Cut salmon fillet into 3 equal pieces and remove skin. Set aside. Mix together mayonnaise, parmesan cheese, capers, and freshly ground black pepper to taste. Spray baking dish with olive oil spray. Place salmon fillets in pan. Divide mayonnaise mixture evenly and spread on top of salmon fillets. Bake uncovered at 425 degrees for 20 minutes or until fish flakes and topping is light brown. Makes 3 four ounce servings.
