Ingredients

    Azumaya Extra Firm Lite Tofu, 2.8oz, 5.7 serving
    Newman's Own Cabernet Marinara Sauce, 2 cups
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 3 tsp
    Carrots, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.75 cup, chopped
    *artichoke hearts, 0.5 cup
    Soy sauce (shoyu), low sodium, 2 tbsp
    Capers, 1 tbsp, drained
    *Worcestershire sauce-vegan, 2 tsp
    balsamic vinegar, 1 tsp
    Oregano, ground, 0.5 tsp
    *Crushed Red Pepper (a dash), 1 serving
    Basil, 1 tsp
    Parsley, 1 tsp
    Salt, 0.5 tsp
    Pepper, black, 0.5 tsp

Directions

Slice tofu lengthwise to form 3 cutlets. grill or roast with soy sauce (Not in calories).
Heat Oil in 3 qt Pot
add onion and garlic, cook 3 minutes
Add Carrots and bell pepper, cook for 10 minutes; add water if needed to prevent sticking.
Add tofu and marinara; reduce heat and simmer for 10 minutes.
Add remaining ingredients and mix well.
