Introduction

This is a dish my mom always made for us growing up. It's not super-healthy, but it's not awful either. For me it's a real comfort food and as long as I watch my portions, it's perfect for dinner after a hectic day. This is a dish my mom always made for us growing up. It's not super-healthy, but it's not awful either. For me it's a real comfort food and as long as I watch my portions, it's perfect for dinner after a hectic day.

Ingredients

    1 box macaroni & cheese
    1/2 medium onion, chopped
    1/2 lb veggie crumbles or ground beef
    1 can (15oz) yellow corn
    1 cup tomato sauce - no salt added
    1/8 tsp pepper
    1/2 Tbsp yellow mustard
    1/2 Tbsp vinegar
    1/2 Tbsp splenda
    1/2 cup shredded mozzarella or sliced cheese

Directions

1. Preheat oven to 350.
2. Cook macaroni noodles per box directions.
3. Sautee onions & veggie crumbles (or beef) in skillet.
4. Mix in corn, tomato sauce, cheese packet & seasonings, allow to simmer about 10 minutes.
5. Add in noodles, mix well, and simmer about 5 more minutes.
6. Top skillet mixture with shredded or sliced cheese, then bake in oven at 350 for 5 minutes.

Cut into eight servings.
