Salsa Verde Soup - serves 6

Introduction

Very easy soup shared by S.I.L. I don't know where she got it but couldn't find the exact same recipe on line so am entering here. It has become a winter-staple for us. It comes together very quickly. The garnishes really 'make' this soup.

This can serve 6-8 people, but for the sake of having firm values for the recipe calculator, making it 6 servings.

This soup has heat to it. Note that the better the salsa brand and broth, the better ther final results.

The Salsa Verde used in the recipe calculator is Herdoz, 16 oz. Of course, you can control the sodium by making your own salsa verde.

Ingredients

    12-16 oz. salsa verde
    1 pkg. firm tofu, diced and marinated with some of the salsa
    32 oz. vegetable broth (low sodium if available)
    1 can yellow hominy, drained
    3/4 tsp. Mexican oregano, powdered

    Garnish - ladle hot soup into bowl and garnish to taste. The below values are those used to calculate the per-serving nutrients.

    1/2 C shredded red cabbage (per serving)
    1 TB sour cream (per serving)
    1 TB chopped cilantro (per serving)
    1/6 of a whole chopped avocado (per serving)


Directions

Heat broth, salsa & oregano in heavy soup pot. Add hominy and heat. Add tofu and heat. Pour in bowls and garnish.
