ESPICALLY IF YOU ARE A JALAPENO PERSON EVERY BITE YOU EAT, EAT SOME JALAPENO FRESH....PLUS IN CASE YOU DIDNT KNOW, JALAPENOS ARE KNOWN FOR A METOBLISM BOOST..GOOGLE IT :). I ATE HALF FOR DINNER AND THE OTHER HALF THE NEXT NIGHT FOR DINNER.     1 PEELED EGGPLANT SLICED NOT TO THICK OR THIN
    1/2 CUP OF MUSHROOM
    5 FRESH JALAPENOS
    20 LEAFS OF SPINICH
    5 RINGS OF BELLPEPPER SLICED
    3 SLICES OF ONIONS
    1 CUP OF GREEN ONIONS
    .5 A CUP OF SPAGETTI SAUCE (TO KEEP CALORIES LOW)
    ONION POWDER (NOT SALT!!! STAY AWAY FROM SODIUM)
    GARLIC POWDER
    PEPPER
    CRUSHED RED PEPPER
    PARSLEY
    OLIVE OIL COOKING SPRAY

Directions

SET OVEN TO 400 DEGREES

*SLICED THE PEELED EGGPLANT IN SLICES NOT TO THICK OR THIN SO I CAN HOLD THE INGREDIENTS BUT YET NOT BE STOUT BC ITS THICK
*CUT VEGIS, YOU CAN EITHER ADD JALAPENO AND BAKE OR EAT RAW LIKE ME
*ONE SIMPLE SPRAY OF OLIVE OIL COOKING SPRAY TO PREVENT STICK ON YOUR TWO PANS
*LAYER EGGPLANT PATTIES WITH SPAGETTI SAUCE AND SEASON
*ADD GREEN ONION, ONIONS, PEPPERS, MUSHROOMS AND THE FRESH SPINICH LAST. THE SPINICH AFTER IT BAKES KIND OF KEEPS THE VEGGIES ATTACHED.
* SEASON AGAIN AND HEAVY ON GARLIC AND HEAVEY ON PARSLEY

I COOK IT FOR 30-45 MINS THEN AFTER I HAVE FRESH JALAPENOS FOR A NICE KICK AND CRUNCH WITH A GLASS OF 1% MILK.
