Pasta Salad

Introduction

Great for a side dish or even a light meal - use whatever veggies you have on hand Great for a side dish or even a light meal - use whatever veggies you have on hand
Number of Servings: 12

Ingredients

    14.5 oz box Ronzoni Smart Taste Rotini pasta, cooked
    1/2 c red wine vinegar
    1/4 c extra virgin olive oil
    1 Tb Italian seasoning (or mix of basil, oregano, thyme, etc)
    1 Tb grated parmesan cheese
    24 slices low fat pepperoni, quartered
    3 oz reduced fat cheddar cheese, diced
    2 c broccoli florets
    2 roma tomatoes, chopped
    1/4 c onion, chopped
    2 cloves garlic, minced
    1 c carrots, chopped
    15 medium olives, sliced

Directions

Toss all ingredients together in a large bowl; no need to blend dressing ingredients separately. Refrigerate at least 4 hours for best flavor. Makes 12 heaping cup servings.
