Steel-Cut Oats in Soymilk

Introduction

Fiber and protein packed breakfast! Add fresh fruit, walnuts, or my lemon-raspberry sauce for a well-balanced breakfast! Fiber and protein packed breakfast! Add fresh fruit, walnuts, or my lemon-raspberry sauce for a well-balanced breakfast!
Number of Servings: 2

Ingredients

    1/3c Steel-Cut Oats, dry
    1c Plain Soymilk

Directions

Heat soymilk at medium to medium high in small saucepan. When soymilk begins to steam, but not boil, add steel-cut oats. Reduce heat to low and cover to keep soymilk from creating a protein film. Stir occasionally to keep from sticking to bottom of pan. Let simmer and thicken for 20-25 minutes, or until desired consistency.

The soymilk is already sweet enough that no extra sugar is needed! Add walnuts and fresh fruit for more variety. Enjoy!
