Trinidad Fish Broth

Introduction

Your favorite fresh fish can be used.
Fresh Green Seasoning is a mixture of chive, parsley, Spanish thyme, and pimento pepper blended together. You can use dried herbs instead to season your fish.

Number of Servings: 8

Ingredients

    1 1/2 - 2 lbs Fish (cleaned and sliced)
    2 Garlic Cloves minced
    1 tsp Salt
    Black or Hot Pepper (optional)
    1 Tbsp Lime Juice
    2 Tbsp Green Seasoning
    1 1/2 Cup Potatoes
    1 Cup Carrots
    3 Green Bananas
    2 oz Macaroni, shell, elbows (your choice)
    1/2 Cup Onion Chopped
    1/2 Cup Tomatoes Chopped
    1 Tbsp Cooking Butter (Golden Ray)
    Water

Directions

1. Clean and season fish with garlic, salt, pepper, lime juice and green seasoning.
2. Peel potatoes, carrots and chop into pieces
3. Wash and place green banana with skin intact in soup pot. Cover with enough water and boil for about 10 mins.
4. Remove bananas from water and set aside to cool.
5. Add potatoes and carrots to water. Boil until partially cooked.
6. Peel boiled banana, cut into pieces and add to pot. Add macaroni to pot.
7. Add seasoned fish, onions, tomatoes and butter to pot.
8. Add water to made desired amount of broth.
9. Cook until fish flakes easily.
10. Add Salt, pepper and lime juice to taste.

Makes about Eight 1 1/2 cup servings.
