Introduction

This is a version of Hungry Girl's Pasta Alfredo. I changed a couple of ingredients but the basic recipe is hers. The longest part of the prep is preparing the noodles. It will not replace a traditional Alfredo sauce but does allow you to enjoy a plate of pasta for under 120 calories! This is a version of Hungry Girl's Pasta Alfredo. Ingredients

    1 package House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute (any shape will work)
    1 wedge The Laughing Cow Light Queso Fresco & Chipotle cheese
    1 teaspoon Fat Free Greek yogurt
    3 teaspoons Reduced Fat 4 Cheese Mexican Blend
    2 Tablespoons Mild salsa



Directions

Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. (Getting the noodles dry is very important! If they are not dry enough you end up with a watery sauce)
Add cheeses and yogurt. Mix thoroughly. Microwave to help melt cheese further, add salsa and mix some more. Add salt and pepper to taste. Enjoy. Serves 1.

If you find that there is not enough sauce for your tastes, you can add more Laughing Cow cheese (35 cal per wedge) or salsa (10 cal per Tablespoon for the type I used) without adding to calories much.
