Introduction

Just spicing up Trader Joe's Harvest Blend Israeli Couscous! Recently updated to be vegetarian! Nutrition facts use water, but you can use vegetable stock instead! Just spicing up Trader Joe's Harvest Blend Israeli Couscous! Recently updated to be vegetarian! Nutrition facts use water, but you can use vegetable stock instead!
Number of Servings: 4

Ingredients

    1 T Olive Oil
    1/4c chopped white onion
    4 whole sun-dried tomatoes, chopped
    2c water (or vegetable stock)
    1 1/2c Trader Joe's Harvest Grains Blend Couscous
    Salt (to taste)
    1/2 tsp ground pepper
    3 tsp ground cumin
    Juice from 1/2 lime
    2 T cilantro, chopped

Directions

Heat olive oil sauce pan. Add onion and tomatoes and cook until onions are translucent. Add chicken broth and bring to a boil. Pour in couscous. Add salt, pepper, cumin, and lime. Simmer covered for 10 minutes. Remove from heat. Mix in chopped cilantro and serve!

    Ah! When I entered this, I actually ate it as my whole dinner, so I only put it in as 2 servings... I just changed it to 4 servings. It's still a little high in cals for a side dish, but it's a great treat once in a while!
