No Crust Vegetable "Pot Pie"

Introduction

This is a recipe I've made for 20 years and is filling and satisfying. There may be lots of Veggie Pot Pie variants out there, but I wanted to see what the calculator would come up with. This is crustless. You serve it with Drop Biscuits instead of a crust.

Number of Servings: 6

Ingredients

    * 2 TB canola oil
    * 1 8 oz package (about 1 heaping cup) of fresh mushrooms, quartered
    * 2 med. turnips, peeled and cut into 1/2 inch cubes
    * 2 med. carrots, thinly sliced
    * 2 med. celery stalks, chopped
    * 1 med. onion, diced
    * 1 1/4 C nonfat milk
    * 3 TB all purpose flour
    * 2 C low sodium chicken broth
    * 1 1/2 C frozen corn
    * 1 small bunch broccoli, or about 2 C, chopped bite sized
    * 1 tsp dried rosemary
    * 2 tsp thyme
    * 1 1/4 tsp salt
    * Fluffy Drop Biscuits (see Whole Wheat Drop Biscuits Submitted by: MUSIC2HISEARS).

Directions

* About 1 hour before serving: in oil, cook mushrooms, turnips, carrots, celery, and onion, stirring 8-10 minutes.

* Mix milk with flour and stir into veggie mixture, along with broth, corn, broccoli, herbs, and salt.

* On high heat, bring the mixture to boiling. REduce heat to low, cover and simmer 15-20 minutes, or until the veggies are tender.

* Serve hot in bowls, topped with a fluffy drop biscuit on top. (see Whole Wheat Drop Biscuits Submitted by: MUSIC2HISEARS).

Makes about 8 servings (which this recipe is calculated for).
