Introduction

adapted from Rebecca49's recipe, just healthier. (Thank you Rebecca49! My kids love this!) Very moist. Number of Servings: 18

Ingredients

    2 eggs
    3/4 cup sugar
    1/3 cup vegetable oil
    1/3 cup applesauce
    1& 1/4 cups flour
    1 tsp baking soda
    1 tsp baking powder
    1 tsp cinnamon
    1 cup grated carrots
    1 cup grated zucchini
    1/2 cup raisins

Directions

Beat eggs with sugar until light. Gradually beat in oil and applesauce. Add dry ingredients. Beat at medium/high speed 4 minutes. Stir in carrot, zucchini, and raisins. Pour into a greased 9 by 13 baking pan. Bake in a 350-degree F oven for about 35 minutes or until top springs back when lightly touched.
