Mammy's Skillet Cornbread

Number of Servings: 6

Ingredients

    1 c. flour
    1 c. cornmeal
    2 tbsp. oat bran
    1 tbsp. baking soda
    1/2 c. sugar
    1 c. nonfat milk
    1 omega egg
    1/4 c. smart balance oil

Directions

Mix dry ingredients. Mix wet ingredients separately. Quickly mix together just until all the dry clumps are gone. Preheat oven to 425 degrees F. Preheat cast-iron skillet sprayed with cooking oil. Dump batter into hot skiilet and bake 20 - 25 minutes.
