Bruschetta Chicken

Introduction

Tomato and chicken dish Tomato and chicken dish
Number of Servings: 8

Ingredients

    5 chicken breasts
    1 cup shredded cheddar
    2 tbsp dried basil
    1/4 red bell pepper
    1/4 green bell pepper
    1/2 to a whole onion (to taste)
    2 cloves garlic
    1 large can diced tomato
    1 package stove top stuffing

Directions

Cut chicken into bite sized pieces and place in casserole dish.
Place cheddar on top, and sprinkle dried basil to taste.

In a separate bowl, combine remaining ingredients.

Spread over chicken and bake for 30 minutes, or until chicken is cooked.

I like to broil the top just at the end to crisp the bread crumb.

To lower the calories, do not use as much bread crumb or cheese. 1 cup of cheese, however, is not a terrible amount for 8 servings, and it adds a needed creamy element.
