Green Soup with Ginger

Ingredients

1 large yellow onion
2 TBSP olive oil
1.5 tsp sea salt
1 large sweet potato (12 oz)
1 lag leek, white and light green parts
1 bunch spinach (8oz)
1 lg bunch green chard (12 oz)
3 TBSP chopped fresh ginger
2 c vegetable broth
2-4 tsp fresh lemon juice
freshly ground black pepper
Directions
Chop onion and cook slowly in the olive oil with a sprinkly of salt, stirring now and then, over low heat until it is sof & golden, about 30 min.
Meanwhile in another pot: Peel and dice sweet potato & put it in a large soup pot with 4 cups water and a tsp of sea salt. Thoroughly wash the leek, spinach, and chard. Chop them coarsely & add to the pot along with chopped ginger.
Bring the water to a boil, then lower heat & simmer, covered for 30 min. Add caramelized onions when they are ready. Add vegetable broth with vegetables are soft.
Puree soup to desired consistency.
Stir in 2 tsp of lemon juice & add a few grinds of black pepper. taste and add addition salt or lemon juice as desired.
Serves 6.
