Kim's Cinnamon Zucchini Bread

Introduction

This is a double recipe that makes 4 loaves. This is a double recipe that makes 4 loaves.
Number of Servings: 40

Ingredients

    6 eggs
    4 1/2 c granulated sugar
    4 c grated zucchini w/ rind
    2 T vanilla extract
    6 c flour
    2 t salt
    2 t baking soda
    1 t baking powder
    4 T ground cinnamon

Directions

Beat eggs until light and foamy.
Add sugar, oil, zucchini and vanilla.
Mix lightly, but well.
Set aside.
Combine flour, salt, baking soda, baking powder, and cinnamon.
Add to the egg-zucchini mixture.
Mix until well blended
Bake in 2 loaf pans
Do not grease
Bake for 50 minutes to 1 hour, until done at 350F
