1 bag coleslaw mix 6 cups water 1 large can diced tomatoes 1 can 2% evaporated milk 1 can lite coconut milk 2 tblsp. curry powder 16 large peeled shrimp 3 tblsp chicken stock powder
Empty coleslaw mix into large pot. Barely cover with water (about 6 cups) add can of diced tomatoes. Boil for 20 mins. Add curry powder, evaporated milk, coconut milk, shrimp and chicken stock to taste. Heat through until shrimp is cooked on low. Do not let boil or become too hot as milk will separate. Makes 8- 2 cup servings.
