Homemade Minestrone

    Ground Turkey, celery, onion, garlic, chicken broth, water, tomatoes, kidney beans, carrots and whole wheat pasta


In deep soup pot, brown ground turkey.

Add diced celery and onion, saute until soft

Add water, broth, stewed and pureed tomatoes and carrots. Bring to a boil then reduce heat, cover and simmer for 20 minutes.

Increase heat, bring to a boil and add kidney beans and pasta. Cook at med/high heat until pasta is cooked.

Serving size = 1 cup
