Introduction

This is a healthy version of arroz con gandules which is a dish from the Dominican Republic...Rice w/ pigeon peas. This is a healthy version of arroz con gandules which is a dish from the Dominican Republic...Rice w/ pigeon peas.
Number of Servings: 12

Ingredients

    Rice, ground chicken, onions, peppers, broccoli slaw, salt, pepper, fresh cilantro, Goya Sazon, oil and vinegar and garlic.

Directions

Makes 12, 1 cup servings. Saute chopped veggies in oil ( you may use celery instead of broccoli slaw) add salt pepper and vinegar, sautee 2 mins, add 5 or 6 whole strands of cilantro and 1 packet of Sazon. add chicken and cook til almost done mixing in pan to incorporate all flavors. Add 1 can of beans ( pigeon pea and black beans work best) and 3 cups of water. Bring to a boil and add 2 cups of rice and the second packet of Sazon. Boil covered until rice is tender and ready! Enjoy!
