Ingredients

    1/2 small yellow onion
    1/2 large red bell pepper
    1 stalk celery
    1 large hardboiled egg
    12 0z. frozen cooked salad shrimp, thawed, rinsed and squeezed to remove excess moisture
    1 Tbsp. sweet pickle relish
    2 Tbsp. light mayonnaise
    1/2 tsp Old Bay seasoning
    1 tsp dried dill, or to taste

Directions

Makes 4 servings

Pulse the onion, celery and red bell pepper in the food processor to coarsely chop them. Add the hardboiled egg, shrimp, mayonnaise, sweet relish, Old Bay and dill weed. Cover and pulse until coarsely chopped and the ingredients are well mixed. May be served as a sandwich filling, or on greens as a light lunch. I made mine with Flatout flat bread and spinach leaves to make a sandwich rollup. Bread and greens not included in nutritional information.
