Vegan Fried Rice

Introduction

I use frozen vegetables, but fresh would work just as well!! I use frozen vegetables, but fresh would work just as well!!

Ingredients

    6 oz firm tofu (cubed)
    .5 cup uncooked brown rice
    14 spears asparagus
    1 1/3 cup peas
    2 cups broccoli
    2 cups cauliflower
    2 tbs ponzu
    6 oz baby carrots (shredded)

Directions

Cook brown rice (and steam any vegetables that aren't already cooked,

Throw everything in a pan or wok, cook until well blended and heated thouroughly.
