Vegetable Stew

Number of Servings: 6

Ingredients

    2 Tbsp Olive Oil
    1 Large Onion, chopped
    1 bag Veggie Crumbles
    3 cloves Garlic, minced
    2 medium Baking Potatoes
    1 cup Carrots, chopped
    3/4 cup Frozen Corn
    3/4 cup Frozen Green Beans
    1/2 cup Frozen Peas
    28oz Diced Tomatoes
    2 cups Water
    1/2 tsp Herbs de Provence
    1/4 tsp Black Pepper
    1/2 tsp Salt

Directions

1. Sautee onions, garlic & veggie crumbles in olive oil.
2. Add potaotes & carrots, sautee a little more.
3. Add remaining ingredients, bring to a boil.
4. Cover, lower temp to simmer about 30 minutes.

Serves up great with some homemade cornbread!
