Southwestern Meatloaf

Introduction

Saw a meatloaf with zucchini but i wanted to adjust for Egg Beaters & low calorie bread... Saw a meatloaf with zucchini but i wanted to adjust for Egg Beaters & low calorie bread...
Number of Servings: 4

Ingredients

    1 pound ground chuck
    1 medium zucchini (about 1 cup grated)
    1 medium onion (1/2 cup grated)
    4 slices Aunt Millie's light bread
    1/2 cup Southwestern egg substitute
    1/2 cup canned diced tomatoes with chilis
    Salt Sense & pepper to taste
    1/4 tsp. garlic granules
    1 tsp. chili powder

Directions

Moisten bread with water & squeeze most of the water out. Combine with all the rest of the ingredients.
Place in a loaf pan that has been sprayed with no calorie vegetable spray.
Bake at 350 degrees for 1 hour.
Note: I used four small loaf pans & freeze 3 of them for other meals.
