Introduction

A terrific way to start your day, much better than the frozen waffles you can find at the grocery store. A terrific way to start your day, much better than the frozen waffles you can find at the grocery store.
Number of Servings: 5

Ingredients

    1-3/4 cup whole wheat flour
    1/2 tsp of salt
    1 tbsp baking powder
    2 egg yolks
    2 egg whites
    1-3/4 cup skim milk
    1/2 cup unsweetened applesauce
    3 tsp Splenda
    1 tsp vanilla extract

Directions

In a large mixing bowl stir flour, baking powder, Splenda and salt.
In a small mixing bowl beat egg yolks, milk, vanilla and applesauce.
Add to the flour mixture all at once.
Stir mixture until blended.
In small mixer bowl beat egg whites until stiff peaks form. Gently fold beaten egg whites into original mixture and do not over mix.
Pour batter onto preheated waffle maker which has been sprayed with non-fat cooking spray.
They take about 3-5 minutes depending on your waffle maker.
To keep waffles warm while making the batch, turn oven on to 200 and place the cooked waffles on the wire rack.
These waffles freeze well and will reheat in a toaster. This is a much healther choice than frozen ones from the grocery.

    Great waffles! I used regular sugar. It's only 1 Tbsp, and I try to eliminate artificial ingredients when I cook. I think these will become a regular addition to our weekend menus. - 4/14/08

    Hi guys. The reason for the sogginess of the waffles is likely Splenda. Regular waffles are crispy because the sugar in them caramelizes. Splenda doesn't do that as well as regular sugar. If you must have your waffles crispy, try replacing the Splenda with sugar. - 6/11/09

    These tasted wonderful! I accidentally left out the vanilla and purposely left out the sugar. Yum-yum. They were enjoyed by all seven of my children. I took it one step further: I spread a little natural peanut butter and cut banana on top with a light drizzle of sugar-free syrup. Tasty! - 9/4/09

    Very similar to the recipe I have been using for years. JABLESON, I just add a little more liquid when I make pancakes--about 1/8 cup milk more for this recipe--than when I make waffles.
    For anyone who craves those wonderful Danish Aebleskivers (and has a pan) this recipe is the right consistancy. - 8/20/09

    These waffles were great!I selected this particular recipe because it mentions they freeze and reheat well in a toaster which is what I was looking to do. The recipe is absolutely right! I had one for breakfast this morning and it was fantastic! Possibly even better than fresh off the waffle maker. - 11/4/09

    I used brown sugar instead of the Splenda, added some tart cherries. I'll use all egg white next time to reduce fat and cholesterol. And try it with some ground flax seed. - 8/7/09

    The whole family loved them. They have so much more flavor than the 'boxed' waffle mix. Mine weren't really crispy, but that might be more the fault of my waffle maker than the mix. They were still really good though. And frozen the left over reheated well in the toaster! - 5/18/09

    Nice taste. The cooking spray is absolutely essential on every waffle. Had some stick to the non-stick waffle iron! The tended to fall apart upon removing them from the iron.

    This was my first attempt at making anything with whole wheat flour. The waffles turned out great. I made them on my Geroge Foreman 5 in 1 grill and they didn't stick one time. Awesome recipe - 1/8/08

    I made the waffles for dinner tonight, and my husband and I loved them. I followed the recipe except replace the Splenda with sugar. The next time I make them I will try leaving the sugar out completely, like someone suggested. We have a small waffle iron, so it made 8. I limited myself to one! - 4/14/10

    i leave out the applesauce & add in 2 tablespoons of avage necter for the sweetness. & instead of the vanilla, i threw in a teaspoon of cinnamon.

    I just tried them to day. I'm not big on breakfast. I usually have a smoothie and some graham crackers. These were great. I made double the recipe so I could have them during the week. My husband who is not using SP enjoyed them too. - 3/13/10

    Very good! I followed the advice in the comments and added a little cinnamon, and actually used a little bit of brown sugar instead of the Splenda -- mine turned out wonderfully and the kids loved them! I doubled the recipe and froze the extras for quick weekday breakfasts! - 3/6/10

    I used turbinado sugar (raw sugar) instead of splenda. I avoid artificial ingredients, even if it means a few extra calories. Very good. We used our mini Belgian waffle maker and these came out nice and light. - 1/30/10

    FABULOUS!!! Very yummy!
    I did add 1/2 tsp cinnamon. I've made these with both regular unsweetened applesauce and cinnamon applesauce with sucralose. The applesauce that was presweetened with sucralose DEFINITELY made them soggy but using Splenda packets and cinnamon the waffles stayed crisp. - 1/30/10

    I won't eat anything artificial...no splenda, egg beaters.
    Better living isn't through chemistry! We are told all these chemicals are ok but why is there so many health issues that no one knows the cause of? Use applesauce as a sweetner.. small amounts of butter won't hurt-egg whites replace whole. - 3/27/10

    I use no salt, and brown sugar or honey w/whole wheat, and nutmeg as well as cinnamon. Also, finely chopped nuts and fruit (apples, strawberries, bananas, peaches, berries, etc.) for variety. For holidays, substitute pumpkin puree for the appleauce! Yummy! - 1/27/10

    Great recipe! First time making scratch waffles and it was easy. Only problem I had was my cheap 10 dollar waffle iron cooks unevenly, and burns the middle before they're done cooking. Made 14 little waffles. I also used sugar not splenda. - 1/6/11

    I make it without the splenda and sprinkle fitflax http://www.fitflax.com on it to add extra fiber, omega 3's and antioxidants. FitFlax is a low cal/low carb flax and chia blend that is nutty delicious and helps promote weight loss - 6/29/10

    These were great. The reason they're not crispy is that they don't have any real fat in them but that trade-off was well worth it to me. I did add cinnamon to the batter and I served them with sliced bananas on top and a tablespoon of real maple syrup. Next time will probably skip the syrup. - 6/14/10
