Red and Green Vegetarian Chili

Introduction

After a long day at work, it's wonderful to come home and have this ready to eat. After a long day at work, it's wonderful to come home and have this ready to eat.
Number of Servings: 6

Ingredients

    1.5 c kidney beans
    3 c navy beans
    1 c cooked quinoa
    4 oz (1 can) diced green chiles
    1 c chopped red peppers
    1/2 c chopped yellow onion
    1 chopped jalepeno
    3 c vegetable (or chicken) broth
    2 tsp. corn starch

Directions

Drain beans (kidney and navy), put in crock pot. Add quinoa, chiles, red peppers, jalepeno, onion and stir. Add broth. (If you have time, you can sautee the onions a bit before adding them).

Cook on warm for 9 hours.

About an hour before eatin' time, ladle 1/2 c broth from crock pot, mix in corn starch, add back to crock pot. Finish cooking for last hour.
