Ingredients

1 pound raw pork pcs, chopped
1 medium onion, chopped
1 tsp sea salt
1/8 tsp freshly ground black pepper
1/4 tsp thyme leaves
3 cups water
1 cup yellow corn meal
1/4 cup buckwheat flour
1 1/2 cups water
Directions
Cook the pork and onions together in a heavy 3 quart saucepan with the salt, pepper and thyme until pork is cooked. Add the 3 cups water and bring to boil, simmer 10 minutes. Mix the cornmeal and buckwheat flour into the 1 1/2 cups water and gradually pour into meat mixture, stirring constantly. Cook on low heat for 10 more minutes, continuing to stir pretty much constantly. Spray a bread pan with cooking spray. Turn scrapple into pan and let it cool thoroughly. Refrigerate overnight. Slice into 16 pieces. Sprinkle each piece with a little flour and fry in a little fat.
