Microwave Brownies

Ingredients

1/2 cup canola oil, or other unflavoured oil
2 large eggs
1 cup sugar
1 tsp vanilla extract
1/2 tsp salt
1/2 cup self-raising flour
1/2 cup plain flour
1/4 cup cocoa
Directions
Measure oil, eggs, sugar, vanilla, and salt into a medium sized bowl and beat with a fork.
Measure flours and cocoa and sift into bowl of wet ingredients. Fold until combined.
Line a 20 cm square or 21 x 15cm rectangular microwave dish with straight sides at least 6cm high with a piece of cling film. Pour in mixture and spread evenly. Cover with non-stick liner or baking paper. (Covering is important for even rising and baking).
Stand the dish on an inverted plate so it is at lest 1 cm above cooking surface. Microwave on HIGH (100%) power for 4-7 minutes, checking every minute after 4 minutes. Do not worry if the surface looks rather uneven, but don't take the brownies out of the microwave until they are dry on top. Cool in container, then turn out.
