Low Cal Banana Nut Bread

Introduction

This is delicious, very dense and moist. If you want light & fluffy, this is not the recipe for you. This is delicious, very dense and moist. If you want light & fluffy, this is not the recipe for you.
Number of Servings: 8

Ingredients

    2 smashed bananas
    1T melted margarine
    1T vanilla extract
    1/2 cup raw sugar
    dash of salt
    1t baking soda
    1 lg egg
    2T 2% milk
    1/3 cup chopped pecans
    3/4 cup white flour

Directions

Preheat oven to 350 degrees and lightly spray two mini loaf pans with no-stick cooking spray.

Mix all ingredients, except the flour, by hand until smooth. Add the flour and divide the batter between the two mini loaf pans. Cook for about 30-40 minutes or until golden brown.

Makes 8 servings.
