Ingredients

4 cups broccoli, chopped
1 cups each, carrots, celery, potatoes, chopped
1/2 cup onion, chopped
2 tsp garlic
1 tsp fresh thyme
1 tsp black pepper
1 Bay leaf
1 Tbsp curry powder
1 tsp salt
3 cups water
2 cups 2% milk
1/2 cup Cheez whiz light, or other processed cheese spread
Directions
Makes 16 1-cup servings [approximately]
Add all vegetables, herbs and spices to a 4+Litre slow cooker
Add water to cover
Set on low and leave to cook for 5 hours [or longer
Use a stick blender to puree the soup until smooth
Add milk, if a thinner consistency is preferred, add additional milk
When milk is heated through, add the Cheez Whiz [processed cheese spread allows the soup to remain smooth and not become stringy]
Heat through and adjust seasoning, if required
