Low Fat No Guilt Cheezy Zucchini Cakes

Ingredients

    Zucchini, 1 cup, sliced
    Parmesan Cheese, shredded, 4 tbsp
    Garlic powder, 1 tsp
    Pepper, black, 1 tsp
    Egg white, 1

Directions

Place all ingredients in a food processor* and pulse until fully mixed into a crumb type mixture.

Mold mixture into cakes the size of your choice.**

Spray a nonstick pan with nonstick spray liberally and heat on medium low.

Place cakes in pan and cook 4-5 minutes on each side.

Place cakes on plate to cool for 5 minutes.*If you don't have a food processor, you can grate the zucchini on a cheese grater or slice thin and mince. Mix all ingredients in a bowl and make cakes.

**If mixture is too dry to mold into cakes, add a little water.

Serves: 2
