Chicken Fried Rice

Introduction

Quick and easy meal and a great way to use up left over veg. Quick and easy meal and a great way to use up left over veg.
Number of Servings: 10

Ingredients

    2 Cups cooked Basmati Rice
    1 1/2 cups diced roast chicked
    100g diced bacon
    1 carrot, diced
    1/4 cup each of Red, Green & Yellow pepper
    1/5 cup frozen peas & cord
    1/4 diced celery
    2 Eggs
    2 Tbsp soy sauce

Directions

Makes aprox 10 servings (about 150g)

- Cook Rice (I use pre-cooked rice, it works better when it's a bit dry but fresh cooked works just as well)
- Dice vegetables
- Chop chicken (I use roast chicken meat, no skin)
- Cook bacon
- Puch bacon to one side and add egg. Once almost cooked use spatula to cut egg into bit size peices.
- Add vegetables and mix untill coooked
- Add chicken and mix thru
- Add rice and soy sauce and mix well until well combined and mix is hot thru.
