Susan's fat-free blueberry muffins

Introduction

Healthy blueberry muffins with lots of fiber! With just under 100 calories each, they are a guilt-free pleasure. :) Healthy blueberry muffins with lots of fiber! With just under 100 calories each, they are a guilt-free pleasure. :)

Ingredients

    1 cup flour (or whole wheat)
    1c oats(old fashioned, NOT quick cooking)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup applesauce (can also use unsweetened)
    2 egg whites
    1/4 cup brown sugar
    cup splenda
    1/2 cup water with splash of lemon juice and tsp vanilla in water
    1c blueberries, fresh

Directions

Spray 12 cup muffin tin and preheat oven to 350 (175C)

Sift flour, baking soda, salt, cinnamon, splenda and sugar together in a bowl. Add oats and mix thoroughly.

In a separate, small bowl add applesauce, egg whites. In cup measuring cup, first squirt a small amount of lemon juice and then tsp. vanilla and fill remainder of cup measuring cup with water. Add water mixture to egg whites and applesauce and mix thoroughly.

Add wet mixture to dry ingredients and , mix until just blended. Do not overbeat. Fold in blueberries. And use an ice cream scoop to fill muffin tin half way. Turn heat up slightly to 400 and bake for 20-25 minutes in the center of the oven, or until tops are golden.
