Super Easy Veggie Chili

Introduction

Number of Servings: 4

Ingredients

    1 15 oz can black beans
    1 14.5 oz can crushed tomatoes
    1 cup TVP
    1 tsp (or 1 clove) crushed garlic
    1/2 cup diced red peppers
    1/2 cup diced celery
    1/2 cup diced onion
    1 tbsp olive oil
    1 tbsp chili powder
    1 4 oz can green chiles (optional)

Directions

Heat olive oil in small skillet. Lightly saute peppers, celery, and onion until translucent. Add chili powder and cook for 1 minute. Add mixture to large saucepan or crockpot.

Drain and rinse black beans. Add black beans, crushed tomatoes, garlic, and water to the vegetable mixture in the pot. Stir it all together. Simmer for 45-60 minutes on medium low heat (stovetop) or 6 hours on low (crockpot). If you want more heat, add the green chiles for about the last 10 minutes of cooking.

Serves 4 as an entree, 8 as a side dish.
