Pearla's Protein Muffin

Introduction

Textured, chewy, spicy muffin, full of protein to get you going in the morning or even for a snack. Textured, chewy, spicy muffin, full of protein to get you going in the morning or even for a snack.
Number of Servings: 1

Ingredients

    3 egg whites
    1/3 cup old fashioned oatmeal
    2 tablespoon herbalife vanilla protein powder
    1/4-1/2 teaspoon ground cinnamon
    1/3 cup Wyman's frozen blueberries, thawed

Directions

1. Just throw all of this together and mix well. Pour into a lightly sprayed large ramekin. Cook 2 minutes or longer in the microwave on high power. The longer you cook it the more chewey it gets.

It will 'grow' in the ramekin but as soon as the power is off it will deflate but it is still quite yummy.

Makes 1 very generous and satisfying portion.

    I am new to sparkpeople...like 2 weeks. I will try and figure out how to post a picture and do so. They are not particularly beautiful muffins but they are very good and easy to make is an understatement. I hope you will try this recipe even without a picture and see for yourself.
