Sicilian Lentil Soup

Introduction

16 - 1 cup servings 16 - 1 cup servings
Number of Servings: 16

Ingredients

    1 lb. lentils
    1 large onion, diced
    3 cloves garlic, crushed
    1 can tomato sauce
    1 can diced tomatoes
    4 cups vegetable broth
    8 cups water
    10 oz. spinach
    oregano
    salt
    pepper

Directions

Soak lentils in water for 1 hour, drain
sautee onions with garlic and oregano until soft
add tomato sauce, tomatoes, broth and water
bring to a boil for about 5 mintues
reduce heat and add lentils
simmer for 1 hour
add in spinach in last 5 minutes, cook until limp
season to taste with salt and pepper
