Tammy's "Clean out the fridge" Vegetable Soup

My family loves this soup on a cold winter day, when we want to enjoy something warm! My family loves this soup on a cold winter day, when we want to enjoy something warm!

Ingredients

    This recipe changes almost every time we eat it. Its my favorite thing to make when I need to clean out the fridge of vegetables about to expire. Standard ingredients are onion, tomato (canned), garlic, chicken or vegetable broth, V8 juice, and broccoli. The rest of the ingredients are dependent on what needs to be used! Cauliflower, green beans, potato, beans, etc.

Directions

Chop all ingredients to desired size and set aside.

Sautee onion and garlic in a pot with olive oil
Add broth and potatos and let them start to cook (about 5 minutes)
Add remainder of ingredients, turn down heat

Soup is ready when all of the vegetables are cooked
