Sweet Pork Dinner

Introduction

Number of Servings: 7

Ingredients

    2 lbs boneless pork roast
    2 cups crushed pineapple
    1 diced small apple
    2 tsp Worcestershire sauce
    7 cups cooked rice
    2 medium tomatoes
    4 cups frozen Italian style vegetables

Directions

Preheat oven at 350

Cook rice to directions and fill casserole dish - set aside.

Cut pork into about 1 inch pieces - In a frying pan or on a non-stick griddle cook pork until cooked through.

Mix pineapple (with juices), apple, Worcestershire sauce, and pour over rice evenly.

Top with cooked pork, tomatoes cut in wedges, and Italian style vegetables. Cover and cook until heated through - less than an hour - serves 7.
