1# fingerling potatoes, scrubbed and sliced; 1 medium onion, chopped; 1 large sweet yelloe pepper, chopped; 1 medium red pepper, chopped; 2 Roma tomatoes sliced; 3 cloves garlic, pressed and chopped; 1 Tbsp olive oil, 5 leaves fresh basil, chopped; 1 Tbsp Rosemary, 2 tsp black pepper.
Sautee onions and garlic in olive oil for about 10 minutes, add peppers, sautee another 5 minutes.
Add tomatoes, potatoes, and spices. Simmer for about 20 minutes (covered), stirring occasionally.
