Introduction

My favorite Mexican restaurant's Pollo Ranchero. Tastes the same just uses less cheese, and only one chicken breast instead of two. My favorite Mexican restaurant's Pollo Ranchero. Tastes the same just uses less cheese, and only one chicken breast instead of two.
Number of Servings: 4

Ingredients

    Ingredients:
    Chicken Breast, no skin, 2 breast, bone and skin removed
    Mushrooms, fresh, 1 cup, pieces or slices
    Onions, raw, 1 large
    Cheddar or Colby Cheese, Low Fat, .75 cup
    Salsa, 2 tbsp

Directions

Saute chicken breasts in non stick cooking spray.
At the same time saute mushrooms and onions.
Once mushrooms and onions are soft add salsa to mixture and stir. Use more if needed.
Spoon an even amount of mushrooms and onions onto each chicken breast.
Drape with cheese and cover so cheese will melt.

Makes four servings, One chicken breast with toppings.
