Ingredients

    1 POUND BONELESS SKINLESS CHICKEN BREAST, CUBED
    1 MEDIUM ONION, CHOPPED
    1/2 TO 1 MEDIUM SIZED PURPLE ONION, SLICED THIN
    RED WINE VINEGAR
    1 CAN REDUCED FAT CREAM OF MUSHROOM SOUP
    1-2 TABLESPOON NORTHWOODS SEASONING FROM PENZEY (OR YOU CAN USE 1½ -3 TEASPOONS SWEET HUNGARIAN PAPRIKA) ADD MORE OR LESS SEASONING TO ADJUST TO YOUR DESIRED TASTES
    TEASPOON DRIED TARRAGON (OR DRIED BASIL)
    TEASPOON SALT
    1/4 TEASPOON CAYENNE PEPPER (I LEAVE THIS OUT ENTIRELY AND PUT THE SHAKER ON THE TABLE)
    3/4 CUP FAT FREE SOUR CREAM (OR NONFAT PLAIN GREEK YOGURT)

    1 1/2 CUPS UNCOOKED RICE, COOKED TO EQUAL 3 CUPS OF COOKED RICE

Directions

COOK RICE ACCORDING TO PACKAGE DIRECTIONS (I USE BASMATI), KEEP HOT WHILE DINNER COOKS. YOU WANT TO HAVE ABOUT 3 CUPS OF COOKED RICE.

SPRINKLE CHICKEN CUBES WITH A 1/4 TEASPOON OF GARLIC POWDER AND SET ASIDE.

MARINADE SLICED PURPLE ONION IN RED WINE VINEGAR, A BIT OF SALT AND A BIT OF PEPPER WHILE DINNER IS COOKING. DRAIN THESE JUST BEFORE SERVING.

SPRAY A NON-STICK SKILLET WITH PAM AND HEAT TO MEDIUM. COOK CHICKEN IN PAN UNTIL COOKED THROUGH AND REMOVE FROM PAN. ADD CHOPPED ONION TO SKILLET AND COOK UNTIL TENDER. ADD SOUP, PAPRIKA (OR NORTHWOODS PREFERRED IF YOU HAVE IT), TARRAGON AND SALT AND MIX WELL. COOK FOR 2-3 MINUTES.

ADD SOUR CREAM AND COOK FOR 1 MINUTE. RETURN CHICKEN TO PAN WITH THE CREAMY MIXTURE AND HEAT THROUGH.

PUT H0T RICE ON A SERVING PLATTER WITH SIDES. TOP WITH CHICKEN MIXTURE. TOP WITH THE DRAINED PURPLE ONIONS.

    I made this and my whol family loved it! I used the paprika because I didn't have the recommended seasoning. I also had to substitute the cream of mushroom for cream of chicken...and omitted the sour cream ecause we were out. Can't wait to try to original version too. - 2/26/08

  • This recipe is identical (with the exc of red onion) to my hungarian paprikas recipe and it is not indian. INone of the seasonings are indian either. The red onion is unnecessary, as red onion is not a cooking onion, its better served raw. i make hungarian dumplings with it. - 1/20/10

  • Excellent flavor, will get Northwoods paprika next time I'm at Penzey's but was very good even with regular. I love onions but didn't get the red onions as a flavor enhancer, easily fixed though. - 4/14/09

  • I love the fact that you included the rice in your calorie count. I've made this recipe several times for my family and they've loved it! TY for posting it on SP. I feel guilty, but I didn't want to take the time to enter my own version...your version is as close to mine as I found! TY again! - 1/15/09

    just wanted to note that this is a Chicken Paprikash is a Hungarian dish and not and Indian dish. ;) - 10/22/08

    Sorry, my friend from India gave me this recipe and she considers it an Indian dish. Does it really matter?

  • Used curry powder instead of paprika- VERY good! I think the base is great and you can change around the spices to get different recipes. - 4/13/08

  • Pretty tasty! I would probably add mushrooms next time and maybe cut the onions by half (but that is just because onions are not my favorite).
