Ingredients

1 POUND SCALLOPS
3 TABLESPOONS LIME JUICE
1 TEASPOON VEGETABLE OIL
1 TABLESPOON HONEY
1 TABLESPOON SOY SAUCE
¼ TEASPOON GINGER
Directions
COMBINE LIME JUICE, OIL, HONEY, SOY SAUCE AND GINGER. ADD SCALLOPS (THAT HAVE BEEN RINSED AND CONNECTING TISSUE REMOVED), TOSS TO COAT. COVER AND REFRIGERATE FOR 1 HOUR, STIRRING OCCASIONALLY. REMOVE SCALLOPS FROM MARINADE. THREAD SCALLOPS EVENLY ONTO 4 SKEWERS. PLACE SKEWERS ON A SHALLOW BAKING PAN THAT HAS BEEN SPRAYED WITH NON-STICK COOKING SPRAY. BROIL 4-6 INCHES FROM HEAT SOURSE FOR 2-4 MINUTES PER SIDE UNTIL OPAQUE THROUGHOUT. SERVES 4.

I really liked it. I was afraid the soy sauce would overpower the lime, but it didn't at all. I liked the citrusy notes, but overall it was more subtle & the flavors blended with the silky scallops better than I thought! I didn't thread on a skewer, just broiled in pan, not too close to heat. - 6/9/10
