Introduction

A flavorful way to serve scallops. Great with saffron rice and a green veggie! Ingredients

    1 POUND SCALLOPS
    3 TABLESPOONS LIME JUICE
    1 TEASPOON VEGETABLE OIL
    1 TABLESPOON HONEY
    1 TABLESPOON SOY SAUCE
    ¼ TEASPOON GINGER

Directions

COMBINE LIME JUICE, OIL, HONEY, SOY SAUCE AND GINGER. ADD SCALLOPS (THAT HAVE BEEN RINSED AND CONNECTING TISSUE REMOVED), TOSS TO COAT. COVER AND REFRIGERATE FOR 1 HOUR, STIRRING OCCASIONALLY. REMOVE SCALLOPS FROM MARINADE. THREAD SCALLOPS EVENLY ONTO 4 SKEWERS. PLACE SKEWERS ON A SHALLOW BAKING PAN THAT HAS BEEN SPRAYED WITH NON-STICK COOKING SPRAY. BROIL 4-6 INCHES FROM HEAT SOURSE FOR 2-4 MINUTES PER SIDE UNTIL OPAQUE THROUGHOUT. SERVES 4.

    I enjoyed this recipe but I think I will cook the scallops in a pan rather than in the oven. The broiler over cooked them and they were somewhat chewy. - 6/14/09

  • I really liked it. I was afraid the soy sauce would overpower the lime, but it didn't at all. I liked the citrusy notes, but overall it was more subtle & the flavors blended with the silky scallops better than I thought! I didn't thread on a skewer, just broiled in pan, not too close to heat. - 6/9/10

  • They were ok. I followed the exact directions and the scallops came out cooked and moist but they had a wierd aftertaste (me and my husband thought so). The flavor wasn't very strong but they did smell sweet and didn't have a scallopy taste. Thanks for the recipe though :) - 6/9/10

  • I don't really like scallops unless they're covered in butter and bacon, but I really liked the sauce. Would be awesome for someone who actually likes scallops more. - 9/16/09

  • I didn't have any ginger so I used cinnamon instead. It still turned out pretty tasty. I also boiled some of the marinade and used it as a sauce for some brown rice. - 7/12/09

  • I liked this low cal. dish very much. I used olive oil and added some garlic to the marinade. I cooked them on the grill and I served it with sweet potato's and mixed steamed veggies. Very nice! - 6/8/08

  • I LOVED the flavor in this! I had 1.5 lbs of scallops, but used the same amt of marinade, but then added some extra lime juice since Iwas really wanting a good lime flavor. It was absolutely fantastic! Quick and easy, too! - 6/8/08
