Cheesy Chicken Parmesan

Ingredients

    Two 14.5 cans diced tomatoes, no salt added
    2 tsp Italian seasoning
    1 tsp dried Basil
    1 tsp dried Oregano
    1 tsp Black Pepper
    1 tbsp Sugar
    1 tbsp Balsamic Vinegar
    0.75 cup Italian seasoned bread crumbs
    24 oz boneless, skinless chicken breast (six 4 oz pieces)
    6 oz Italian Cheese blend, shredded
    6 tsp Olive Oil, divided
    Cooking Spray

Directions

1. Combine diced tomatoes, Italian seasoning, basil, oregano, and pepper in large saucepan. Bring to a boil; reduce heat and simmer, uncovered for 35 minutes. Stir in Sugar and Vinegar, simmer additional 5 minutes

2. Preheat oven to 350 degrees

3. While tomatoes are cooking, place each chicken breast between 2 sheets of heavy-duty plastic wrap; pound to 1/2 inch thickness using a meat mallet or rolling pin.

4. Dredge each chicken breast in breadcrumbs.

5. Heat 2 tsp of Olive Oil in a large non-stick skillet over medium-high heat. Add 2 chicken breasts and cook for 5 to 10 minutes on each side or until browned. Repeat procedure with remaining Chicken and Olive Oil.

6. Spray a large baking dish with cooking spray. Arrange chicken in baking dish and pour tomato mixture evenly over each chicken breast and sprinkle with cheese.

7. Cover and bake at 350 degrees for 30 minutes. Let stand 5 minutes.
