Frizzled Leeks (Mollie Katzen's)

Ingredients

    8 leeks, 1-inch diameter (about 1 1/2 pounds)
    2 T olive oil
    salt to taste

Directions

Clean the leeks thoroughly and slice them paper thin, either in rounds or half-rounds. Dry on paper towels, and set aside.

Preheat oven to 400 degrees. Line a baking tray with foil, and place a double thickness of paper towels on a dinner plate.

Heat the oil in a medium-sized skillet over medium-high heat for 30 seconds or so. Add the leeks to the hot oil, and saute for 5 minutes, stirring frequently with a long-handled fork or with chop-sticks.

Transfer the leeks to the foil-lined baking tray, and bake for 15 minutes, stirring them about every 5 minutes. (They can easily burn if you get distracted and forget to watch them closely. So don't answer the phone until they're done.)

Transfer the leeks to the paper towel-lined plate, and spread them out in a single layer. Sprinkle lightly with salt, and let cool for about 15 minutes.

Store in a tightly covered container, and use as desired.

Yield: 2 cups
Preparation time: 25 minutes (10 minutes of your full attention, plus 15 minutes of intermittent stirring)
