Introduction

Ingredients

    1 cup Bob's Red Mill Buttermilk pancake mix
    1 medium banana, sliced thin
    1 egg
    3/4 cup fat-free milk
    1 tbsp oil

Directions

Add the pancake mix, egg, oil, milk, and thinly sliced bananas into a mixing bowl. Mix well until the batter is lumpy. Use a 1/4 cup measuring cup to spoon the batter into a skillet on medium heat. Cook until the edges are crisp and bubbles form on top, then flip to the other side and cook an additional minute. Makes 8 4" pancakes, with 2 pancakes per serving.
