Autumn Chowder

Ingredients

    1 tbsp olive oil
    1 small onion, chopped
    4 medium red potatoes, cubed
    1 cup carrots, sliced
    2 cups chicken broth
    1 lb polish sausage, thinly sliced and halved
    3 cups milk
    2 cups frozen corn
    salt and pepper to taste
    2-3 tbsp instant mashed potato flakes, if needed
    2 cups cheddar cheese, shredded

Directions

In a large saucepan, saute onion in olive oil, until crisp-tender, add carrots and continue sauteing a few minutes longer, until onions are tender and carrots are crisp-tender. Add potatoes, broth, and polish sausage. Simmer 20-30 minutes. Add milk and corn, continue simmering until heated through, and potatoes are tender. Stir frequently to avoid milk burning. Season to taste. Add a few tbsp of instant mashed potato flakes, if necessary, to thicken. Just before serving, stir in cheese until melted.

Makes 8 servings (approx. 3/4 cup)
